Everyone loves pasta! Anywhere in the world you can find an Italian restaurant! I think that making your own pasta is more delicious that buying it. I will show you here how to make the best pasta!!
Sometimes we end up buying dried pasta in the supermarket because is easier and quicker, but If you can get yourself sometime I really recommend you to make your own.
This is a universal food and cooked different in every place in the world. You can make spicy pasta, sweet, with cheese, meat, fish or anything you like.
First lets get clear which type do we want and second of all how would we eat it? With which sauce???
1st Step is making the dough
- 1 1/2 cups Semolina Pasta Flour
- 1 1/2 cups all purpose flour
- 4 eggs room temperature and slightly beaten
- 4 tablespoons Olive Oil
- 4 tablespoons Water
- 1 teaspoon salt
You need to combine all of the ingredients and mix them, then you need to knead the dough. Choose a plain surface in your house and pour enough flour to mix your pasta dough.
Start kneading the dough until you feel it soft and kind of elastic. You can make it softer with water or harder with flour depending how you feel it. Stop kneading when you see no bubbles.
Continue kneading until you feel its done.
Lastly Wrap your dough with some plastic and let it rest for at least 30 minutes
Using the Pasta Roller:
Portion your dough in small balls, grab a ball, fold it and put it on the roller at its widest level. Remember if your dough feels sticky ad some flour. Repeat this process around 5 times.
Grab your dough again and put it on the roller but decrease the level to the minimum. Ad some flour to your dough.
Fold your dough until you have square edges and pass it again on the roller with the minimum level. More importantly you should have a soft, rectangular dough!
Fold in half your dough again if you don’t get the desired results.
Cut the dough depending on the type do you want.

Now, How to make pasta sauce??
- 2 onions ( remember to chop them)
- 8 cloves of fresh garlic (minced)
- 1/4 cup olive oil
- 2 cans or jars of stewed tomatoes (you need around 56 ounces)
- 6 ounce of tomato paste
- 1/2 teaspoon dried oregano
- 1 tablespoon dried basil leaves
- 1/2 teaspoon dried thyme
- salt and pepper to taste
First, you need to heat the oil in a pot, use medium heat. Then. add the onions and saute until they are soft or for a few minutes.
Add the garlic or a few other minutes (5 min) and saute. After that add the tomatoes, tomato paste, oregano, basil, thyme and salt & pepper to taste.
Wait until it boils, reduce the heat. Then slimmer the sauce for 15 minutes or until you see it melts.
As a result, you will have a delicious sauce and are ready to pour it over your favorite pasta!!!
How to make Alfredo Pasta Sauce
- 1/2 cup of butter
- 8 ounce of cream cheese
- 2 tsp garlic powder
- 2 cups of milk
- 6 ounces of parmesan cheese
- 1/8 ground black pepper
First, melt the butter at a medium temperature on a pan, add the cream cheese and the garlic powder, stirring it with a wire whisk. Add milk, (a little at a time), whisking it to smooth. Stir parmesan and pepper.
When the sauce has some consistency, turn down the heat. Serve it with your favorite pasta!!
